Garlic Shrimp

1/3 cup butter
1 1/2 to 2 pounds large shrimp, peeled and deveined
4 to 6 medium cloves garlic, crushed and minced
1/2 cup chopped fresh parsley
2 1/2 tablespoons lemon juice
Salt to taste

1.  In a large skillet, heat butter over medium heat until butter 
     stops foaming, about 30 to 45 seconds.  Add the shrimp and 
     garlic and saute over medium heat, turning frequently until the 
     shrimp just turn pink, about 4 to 5 minutes.  
2.  Add the parsley, lemon juice, and salt to taste; stir well.  
     Remove the pan from the heat and serve.

Marinated Grilled Shrimp

3 cloves garlic, minced
1/3 cup olive oil
1/4 cup tomato sauce
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 pounds fresh shrimp, peeled and deveined

1.  In a large bowl, stir together the garlic, olive oil, tomato   sauce, and red wine vinegar. Season wil basil, salt, and cayenne pepper.  Add shrimp to the bowl, and stir until evenly coated.  Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice.
2.  Preheat grill for medium heat.  Thread shrimp onto skewers, piercing once near the tail once near the head.  Discard marinade.  
3.  Lightly oil grill grate.  Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.

Coconut Shrimp

1 cup cornstarch
2 pounds fresh shrimp, peeled
1 cup coconut milk
3 tablespoons fresh lime juice
2 cups flaked coconut
1cup vegetable oil, more as needed

1.  Place cornstarch in small bowl.  Place shrimp in bowl and toss 
     to coat well.
2.  I separate medium bowl, combine coconut milk and lime juice;
     dunk shrimp in mixture and shake off excess liquid.
3.  Place flaked coconut in small bowl.  Add shrimp and toss to     
4.  Heat the vegetable oil in a deep skillet over high heat;  when 
     hot, gently add shrimp and fry until golden brown.
Jumbo Shrimp with herb Butter Sauce

Ingredients:                                                                     Preheat Grill to High
16 Jumbo Shrimp                                                Season shrimp with salt and pepper. 
Salt and Pepper to taste                                      Place on grill and cook until crisp,
2 sticks butter                                                       about 2 to 3 minutes per side.
1 teaspoon tomato paste                                     Place on dish and keep warm.
1 teaspoon lime juice                                           Meanwhile, melt butter in medium 
2 tablespoons finely chopped parsley                  sauce pan.  Add remaining 
2 tablespoons finely chopped dill                         ingredients, bring to a boil, and 
2 tablespoons finely chopped basil                      simmer on low heat for 2 minutes.
2 tablespoons finely chopped chives                   Pour over cooked shrimp & serve.
2 tablespoons finely chopped garlic
1 teaspoon Worcestershire sauce
A few drops of Tabasco to taste
1/4 teaspoon Paprika
